Easy Everyday: African Kale Dish

Every so often we come across peculiar pairings of ingredients that mesh unexpectedly well together (think: strawberries and balsamic, watermelon and feta). So when we happened upon Cate Tsahalis's recipe for kale with fresh ginger, tomatoes, and peanut butter, we kept an open mind. Thank goodness we did! No matter the occasion, this recipe is versatile and mild enough to please even the pickiest of palates. And, as it turns out, the dish reflects an African tradition of adding heft to everything from sautés to soups to beverages through the use of wallet-friendly nuts and nut butters. So, it may be unfamiliar, but it's a tried-and-true technique, not a risk.

In this creamy vegetarian main, fresh ginger is the star of the show and a great complement to the peanut butter, while the jalapeño adds a welcome heat that cuts through the richness and sweetness of the sauce. The tomatoes perk up the flavors with just the right amount of acidity.

You’ll rarely feel as satisfied with your cooking as you do after you serve this dish, a seemingly exotic recipe that's made with affordable everyday staples. Discoveries like this are what get us particularly excited to embark on another year of fabulous home cooking. Happy new year, indeed!

African Kale Dish by Cate Tsahalis

Serves 4

1 large bunch kale
1 medium onion
3 cloves garlic
1 jalapeño
2 tablespoons fresh ginger
1 (28-ounce) can diced tomatoes
1 cup natural unsweetened peanut butter
1/2 cup sugar
1 pinch salt
2 tablespoons olive oil
